Add "focus mode"

Please add an optional "focus mode" wherein the toolbar disappears until hovered, and sidebar becomes padding (with real sidebar returning on hover), and equal padding applied to right side so the writing area feels centered.

We came up with a better way to approach this, the forthcoming "Jots" mode

I do not think this is what Bill is suggesting. Focus mode should basically act as a full screen mode for the note, hiding all the menus and buttons and allowing us to "focus" just on the writing alone.
