Handwriting (i.e. with Apple Pencil) recognition in other langauges

I.e. in the Danish language where we have the letters æ ø å

I've tried another notetaking app that wasn't as good as yours, but their handwriting (with Apple Pencil) recognition was top-notch. They use this technology: https://www.myscript.com/

It'd be great if there was a "Convert selected handwriting to text" (using select tool, then "convert" button) and also an option with "Convert handwriting to text automatically when a word has been written".
